In late March, the COVID-19 pandemic forced many restaurants in the area to shut down. Centeno, and his staff, worked with the nonprofit group Dine 11, to help feed those in need. Although many restaurants in the area are now offering takeout or delivery services, Baco Mercat is one of the few still offering full-service dining. In addition, it closed for a short time during the protests over the death of George Floyd.

Baco Mercat, Josef Centeno’s flagship, features a modern design and outdoor patio seating. The restaurant serves brunch, lunch, and dinner. The menu features several types of flatbread sandwiches. It accepts reservations. The restaurant has received several awards and is regularly ranked on Foodable’s Top 25 list.

Bar Ama

Opening a restaurant is not easy. DTLA’s culinary scene is populated with josef centeno restaurants opening and closing like clockwork. Chef Josef Centeno is the chef of the award-winning Bar Ama. He previously owned Baco Mercat and Lazy Ox, which were both in the Downtown area. In late 2011, he decided to open a new restaurant in the Old Bank District. His goal was to have a restaurant within walking distance of his two Downtown restaurants.

The menu at Bar Ama pays homage to his Tex-Mex roots with dishes like fluffy tacos. Other entrees include goat hash with watercress and a fried egg. Guests will also find dishes such as cauliflower with cilantro pesto and pine nuts and fried Brussels sprouts with green olives and cilantro crema. The restaurant also offers a slow-roasted whole goat with a coffee-and-chile rub. For dessert, there’s a pineapple upside-down cake with fennel pollen dusting.

Orsa & Winston

If you love fine dining, you should try Orsa & Winston, one of Josef Centeno restaurants. It serves dishes like koshihikari rice risotto with uni, geoduck foam, and medium-rare squab. It also features a great wine list and reasonable prices.

Orsa & Winston is chef Josef Centeno restaurant. His first two places, Baco Mercat and Bar Ama, were casual eateries. However, wanted to open something more sophisticated. Incorporated elements of Japanese and Italian cuisines into the dishes at Orsa & Winston. The restaurant’s intimate dining room features an open kitchen.

Centeno has been a fixture on the L.A. culinary scene for nearly a decade. His restaurants serve a la carte appetizers and pastas for lunch. But turned his attention to fine dining. While he’s been busy working on his clothing line, Centeno has also continued his passion for cooking.


Ledlow, a new restaurant from Josef Centeno restaurants is an upscale Downtown option for breakfast, lunch, and dinner. The menu offers elevated technique-driven American cuisine, including beef tongue salad and coffee-crusted hangar steak. Customers can also order signature cocktails.

In addition to Ledlow, Chef Centeno owns Bar Ama, Orsa & Winston, and Baco Mercat in Downtown Los Angeles. This four-restaurant complex is located near 4th and Main. Centeno is a James Beard Award-nominated chef, and owns all of the restaurants.

Centeno reopened the restaurant just in time for the weekend. The new concept is inspired by the Americana theme, and the menu has plenty of innovative veggie dishes. The charred broccolini, for example, has a taste similar to that found in Baco Mercat. The fried eggplant and beef ragout is also a standout dish, and comes with an intense vinegar flavor.

Centeno began his career at a small Los Angeles restaurant called Bar Ama, which features innovative small plates that are inspired by the flavors of his childhood. From there, he went on to open Winston and Orsa, as well as Ledlow. Now he manages all four concepts, which he also runs.
